This granola makes use of them to make something delicious for breakfast. With a whole host of ingredient combinations, the options are endless for what you can use.
I had all sorts left in my cupboards after making Christmas mince meat, puddings and cakes, plenty of dried fruit and nuts that wouldn’t be enough to make another whole cake. But by using a combination of them in this granola, I was able to make something equally delicious, as well as clearing out space in my cupboards to make room for more exciting ingredients.

- Sweetener – Maple Syrup, Agave Syrup, Golden Syrup
- Oats – Rolled, Porridge, Pin Head
- Seeds – Pumpkin, Sunflower, Flax, Chia, Hemp
- Sesame Seeds – White or Black
- Nuts – Pecan, Hazelnuts, Almonds, Walnuts, Brazil Nuts, Cashews, Pistachios, Walnuts.
- Berries/Fruit – Dried Dates, Cranberries, Raisins, Figs, Mango, Pineapple.

Makes 2 Large Jars
Ingredients
- 2tbsp Vegetable Oil
- 125ml Sweetener (Maple Syrup, Agave Syrup etc of your choice)
- 2tbsp Honey
- 300g Oats (of your choice)
- 100g Seeds (of your choice)
- 4tbsp Sesame Seeds
- 100g Nuts (of your choice)
- 100g Dried Fruit/ Berries (of your choice)
- 50g Flaked Coconut
Instructions
- Preheat oven to 150C. Line two baking trays with parchment and set aside.
- In a large bowl, mix the vegetable oil, sweetener of choice and honey, stir in the oats, seeds, sesame seeds and nuts, until all coated in the sweetener/oil mixture.
- Split the mixture between two trays, and bake for 15 minutes. Stir to break up the mixture, then add in the dried fruit/berries and coconut.
- Bake for a further 10-15minutes until golden. Allow to cool completely before sealing in an air tight container.
