We all have them.
Those days when you think, why didn’t I just pull my duvet over my head and stay there? I’m lucky that it doesn’t happen that often as I try to be a positive person but sometimes you need is BROWNIES!
This base recipe is from my master class with Paul Young, that I attended a few months ago at Fortnum and Mason. Not that they need them, but I added some extras to make them, even more, mood enhancing – Chocolate drops, Nutella and Crunchy Peanut Butter. That’s right – added CHOCOLATE DROPS, NUTELLA AND CRUNCHY PEANUT BUTTER. Say goodbye to your diet and hello to happy smiles. Not sure if Paul would be happy making his luxurious brownies as trashy as I have! I also doubled the recipe as for my tin (I’m currently low on baking tins so restricted to the size I can use) to get deep rich brownies.
If you’ve read my post about the master class you’ll know that these bad boys are best chilled overnight – it’s torture but well worth the wait trust me. Just plan to have these ready for your emergency kit. Or if you won’t be able to get through a batch, portion the remaining brownie, cling film and freeze then you have a stash for those low points.

Ingredients
- 220g Salted Butter
- 110g Golden Syrup
- 350g Golden Caster Sugar
- 320g Dark Chocolate Drops (I used 72% Cocoa Solids plus 100g extra)
- 6 Medium Free Range Eggs
- 90g Plain Flour
- 100g Nutella
- 100g Crunchy Peanut Butter (I LOVE Honey Roasted Peanut Butter)
Instructions
- Oven to 175C. Line an 8″x8″ tin with baking paper.
- In a saucepan, gently melt the sugar, butter and syrup until the gritty sugar has dissolved.
- Take off the heat and stir in the chocolate until fully melted. Careful not to allow to burn on the bottom.
- Whisk the eggs together in a bowl and add to the chocolate mixture and stir until smooth.
- Sift the flour into the chocolate mixture and mix well. Pour into the tin.
- Scatter the chocolate drops on top of the mixture, then using teaspoons drop little blobs of the Nutella and peanut butter all over the top.
- Bake the brownie for 12 minutes, then turn the tin around and bake for another 12 mins. You don’t want the brownie to be overcooked but gooey and sexy.
- Leave to cool, then chill overnight.
- Tuck in with friends or just yourself until the day isn’t so bad!

Oh man, nutella definitely makes any bad day much, much better. It’s probably one of my favorite flavors in the world. I’ve never had brownies flavored with but, but good God, that is an excellent idea! Must try soon aka immediately…

Agreed, Nutella does make everything. It’s actually rare that I bake with it as it’s normally just eaten off a spoon in my flat!
