Pistachio is having such a moment right now, it’s in practically every possible food version you can think of. And quite rightly, it’s so darn delicious! I like using pistachio cream to make Pistachio and White Choc Rice Krispies Treats Bars. This recipe has plenty of pistachio cream melted with marshmallows to bind rice crispy cereal and white chocolate chunks, with then a dark chocolate drizzle and chopped vibrant pistachios to top these treat squares.
This recipe is great to make with kids as the main part of the recipe is melting the marshmallows and butter with the pistachio cream, but don’t get hot like pure melted sugar and cooled slightly with the mixing in of the cereal so safe for little hands to get involved in.
I get my pistachio cream from Costco as they do it in big ol’jars, which is helpful when the jars don’t last long in my house. Just far too tempting to grab a spoon of this addictive spread when in the kitchen making a cuppa tea. The pistachio cream is more of a spread like Nutella rather than a nut butter, so a bit more stable and less oily to work with in this recipe.
Take these Rice Krispies bars to the next level, without the dark chocolate and fresh pistachio topping, toast the squares over a campfire for a nice nutty char to the edges and gooey middle to make the best s’mores of your life!

Ingredients
- 40g Unsalted Butter
- 290g Marshmallows
- 200g Pistachio Cream
- 160g Rice Krispies Cereal
- 100g White Chocolate Chunks
For Decorating –
- 50g Pistachios, unsalted, roughly chopped
- 50g Dark Chocolate, melted
Instructions
- Line an 8″ Square Tin with parchment paper and set aside. Put the Rice Krispies in a large bowl and set aside. In a large saucepan, over low heat, gently melt the butter with the marshmallows, and stir until melted.
- Stir in the pistachio cream, and stir until melted through. Pour the mixture over the Rice Krispies and stir until coated.
- Stir in the white chocolate chunks into the cereal mixture. Spoon the mixture into the prepared tin, and press down with a spatula so the rice krispies are evenly pressed out into the tin edges. Smooth over the surface. Set aside.
- Scatter the chopped pistachios over the surface of the rice krispies and drizzle over the melted dark chocolate. Allow to set the chocolate before using a sharp knife to cut into squares. Serve.
