Christmas Canapes with Homemade Ricotta Recipe

There are a few things I’ve not attempted to make in the kitchen, that I’ve never really thought to try to make. Crumpets, filo pastry and cheese being the key ones. It’s always felt that life is too short but that’s all about to change. I was sent the Ultimate Cheese Making Kit from Sous Chef to have a go at making my very own cheese at home.  The cheese making kit contains everything you could possibly need to make delicious cheese, all you need to add is the milk! With the kit, you can make a range of cheeses easily at home. Who wouldn’t want to try their hand at making fresh mozzarella, halloumi, ricotta, goat’s cheese, Scottish crowdie, queso blanco, labneh and paneer?

The kit contains enough ingredients for 40 batches of cheese; organic sea salt, citric acid, vegetarian rennet tablets, butter muslin, a dairy thermometer, herbs & spices (so you can customise your cheese), 3 cheese moulds and an instruction, guide & recipe booklet.

I set out to make my own ricotta using the kit and was blown away with the results. The guide is super clear making the most scientific elements of the process easy to understand. In under an hour, I had made two ricotta’s that have such a professional finish to them using the moulds included in the kit. I decided to make some Christmas canapes with the ricotta, using some toasted baguette slices as the base, topped with creamy mountains of my own ricotta and then a whole host of different toppings which would be perfect at a Christmas drinks party.
