There’s nothing better than jaw smackingly chewy sweets or candies. The best example is the dreamy chewy White Rabbit Candy. These are creamy milk chew candies, often found in Asian supermarkets, but I must admit the hopping cartoon rabbit on the packaging is was drew me in first. Glad I followed the white rabbit, like Alice, it led to a great adventure. I’ve been addicted to these rice paper wrapper chews, for a while and I knew I had to try making something with them rather than just gobbling them straight from the bag. This is a recipe for the decadent White Rabbit Candy & White Chocolate Cookies.
Fair warning, the white rabbit candy sticks to your teeth a little, and the firmness of them depends on their age which unfortunately until you tuck in, you won’t know if they are on the soft or firm side. So careful if you have some loose fillings or teeth! They also have a rice paper wrapper under the printed paper wrapper, this is edible and perfectly fine to eat as well as it doesn’t need to be removed for this recipe. Some people don’t like it but I like how it dissolves to nothing on your tongue.
Depending on the firmness of your candies, they may be a bit tricky to chop into manageable chunks. I put mine in a blender (nutribullet) and pulse chopped the candies, careful not to take them too far as you’ll want texture still. You’ll get some dust doing it this way and the chunks may clump, but give the candies a stir before adding everything to the cookie dough.

Ingredients
- 60g Unsalted Butter
- 75g Caster Sugar
- 1/2 egg (about 1.5 tablespoons)
- 1/2 tsp Vanilla Extract
- 85g Plain Flour
- 3/4 tsp Baking Powder
- 1/4 tsp Bicarbonate of Soda
- 50g White Rabbit candy, roughly chopped
- 50g White Chocolate, roughly chopped
Instructions
- Line a baking sheet with parchment paper. Heat the oven to 200C.
- In a bowl, cream together the butter and sugar until fluffy. Mix in the egg and vanilla. Stir in the flour, baking powder and bicarbonate soda. Stir in the White Rabbit candy and the white chocolate.
- Scoop cookie dough using an ice cream scoop or make 1.5 tablespoon balls, then place on parchment-lined cookie trays, well spread out while they bake.
- Bake for 8-10 minute or until golden. The candy will firm up on cooling, careful handling whilst still hot.
