  • 46 Fresh Figs (halved)
  • 1 cup Ground Almonds
  • 1/4 cup Caster Sugar
  • 1/4 cup Plain Flour
  • 1tsp Baking Powder
  • 1/2 tsp Ground Cinnamon
  • 3 Large Free Range Eggs
  • 4 tbsp Unsalted Butter (melted and cooled)
  • 1 tbsp Vanilla Extract
  • 2 tbsp Caster Sugar (extra)


  1. Oven to 180C. Line the base of an 8″ round springform tin with parchment paper. In a bowl mix the ground almond, flour, caster sugar, baking powder and cinnamon. Whisk in the eggs, melted butter and vanilla to a smooth batter.
  2. Pour the batter into the prepared tin and set the fig halves cut upwards into the batter. Sprinkle the extra caster sugar over the top.
  3. Bake for 30 minutes, until golden and the figs are nice and juicy.
