- 4– 6 Fresh Figs (halved)
- 1 cup Ground Almonds
- 1/4 cup Caster Sugar
- 1/4 cup Plain Flour
- 1tsp Baking Powder
- 1/2 tsp Ground Cinnamon
- 3 Large Free Range Eggs
- 4 tbsp Unsalted Butter (melted and cooled)
- 1 tbsp Vanilla Extract
- 2 tbsp Caster Sugar (extra)
Instructions
- Oven to 180C. Line the base of an 8″ round springform tin with parchment paper. In a bowl mix the ground almond, flour, caster sugar, baking powder and cinnamon. Whisk in the eggs, melted butter and vanilla to a smooth batter.
- Pour the batter into the prepared tin and set the fig halves cut upwards into the batter. Sprinkle the extra caster sugar over the top.
- Bake for 30 minutes, until golden and the figs are nice and juicy.
