- 60g Unsalted Butter
- 75g Caster Sugar
- 1/2 egg (about 1.5 tablespoons)
- 1/2 tsp Vanilla Extract
- 85g Plain Flour
- 3/4 tsp Baking Powder
- 1/4 tsp Bicarbonate of Soda
- 50g White Rabbit candy, roughly chopped
- 50g White Chocolate, roughly chopped
Instructions
- Line a baking sheet with parchment paper. Heat the oven to 200C.
- In a bowl, cream together the butter and sugar until fluffy. Mix in the egg and vanilla. Stir in the flour, baking powder and bicarbonate soda. Stir in the White Rabbit candy and the white chocolate.
- Scoop cookie dough using an ice cream scoop or make 1.5 tablespoon balls, then place on parchment-lined cookie trays, well spread out while they bake.
- Bake for 8-10 minute or until golden. The candy will firm up on cooling, careful handling whilst still hot.
