I went for round sprinkles, but these would be perfect cookies to work through all those part jars of hundred and thousands, that seem to multiple at the back of your baking cupboard or that might just be in my kitchen?? I’ve seen some cute dinosaur sprinkles or even mermaid ones which would be brilliant for a kids party. The sprinkles in the cookies, their colour will bleed out slightly when chilling the mixture but that just adds to the lovely colourful nature to the cookies.

If you want half the amount of cookies, but see the recipe contains one egg and find that daunting, crack the egg into a weighed cup, whisk the egg until well mixed, then use half of the weighed amount in the dough. You could save the rest for a glaze for some more baking.

Instructions

  1. In a large bowl, beat the butter, sugar and vanilla until light and fluffy. Beat in the egg until combined and not split. Beat in the flour until you have a dough.
  2. Fold in the sprinkles into the dough. Roll the dough into a 30cm log, wrap in cling film and chill overnight or for at least a couple of hours.
  3. Preheat the oven to 180C, line 3 trays with parchment paper. Slice the dough into 1cm rounds, roll the dough into balls.
  4. Place the remaining sprinkles into a bowl, roll the dough balls into the sprinkles, coating the surface in sprinkles. Place evenly on the trays. Bake for 10 minutes until golden. Leave on the tray for 5 minutes before transferring to a cooling rack. Enjoy!
