You won’t use all the seasoning you mix below, save the remainder in a clean dry jar to sprinkle on eggs, pasta dishes or any meal that needs a jazz-up.


Ingredients

For the Seasoning –

  • 4tsp White Sesame Seeds
  • 2tsp Black Sesame Seeds (if you can’t get hold of them, make up the amount with White Sesame Seeds)
  • 2tsp Poppy Seeds
  • 2tsp Dried Garlic or Garlic Salt
  • 2tsp Dried Onion or Onion Salt
  • 1 tsp Flakey Sea Salt

For the Popcorn – 

  • 75g Salted Popcorn, already popped
  • 110g Unsalted Butter
  • 220g Caster Sugar
  • 85g Golden Syrup
  • 7 tsp Everything Bagel Seasoning, from above or shop-bought
  • 1/4 tsp Baking Powder

Instructions

  1. Make the seasoning, mix together all the seasoning ingredients and pour into a clean dry jar and set aside until needed.
  2. Preheat the oven to 160C, line a couple of baking trays with parchment and set aside. Pour the popcorn into a large mixing bowl and set aside.
  3. In a large saucepan, melt the butter, caster sugar and golden syrup, over medium heat and bring the mixture to a rolling boil, stirring frequently. Remove from heat and stir the mixture for 1 minute to cool it slightly.
  4. Add the Everything Bagel Seasoning and baking powder to the sugar/butter mixture. Stir to combine.
  5. Pour the sugar/butter mixture over the popcorn and toss to coat. Spread the popcorn mixture in a single layer on the prepared baking sheets. Bake for 10-12 minutes or until the sugar coating is set. Be careful not to let the popcorn burn. The coating will firm up on cooling.
  6. Allow the popcorn to cool slightly, before breaking up the pieces with your hands into smaller pieces.
