You won’t use all the seasoning you mix below, save the remainder in a clean dry jar to sprinkle on eggs, pasta dishes or any meal that needs a jazz-up.

For the Seasoning –
- 4tsp White Sesame Seeds
- 2tsp Black Sesame Seeds (if you can’t get hold of them, make up the amount with White Sesame Seeds)
- 2tsp Poppy Seeds
- 2tsp Dried Garlic or Garlic Salt
- 2tsp Dried Onion or Onion Salt
- 1 tsp Flakey Sea Salt
For the Popcorn –
- 75g Salted Popcorn, already popped
- 110g Unsalted Butter
- 220g Caster Sugar
- 85g Golden Syrup
- 7 tsp Everything Bagel Seasoning, from above or shop-bought
- 1/4 tsp Baking Powder
Instructions
- Make the seasoning, mix together all the seasoning ingredients and pour into a clean dry jar and set aside until needed.
- Preheat the oven to 160C, line a couple of baking trays with parchment and set aside. Pour the popcorn into a large mixing bowl and set aside.
- In a large saucepan, melt the butter, caster sugar and golden syrup, over medium heat and bring the mixture to a rolling boil, stirring frequently. Remove from heat and stir the mixture for 1 minute to cool it slightly.
- Add the Everything Bagel Seasoning and baking powder to the sugar/butter mixture. Stir to combine.
- Pour the sugar/butter mixture over the popcorn and toss to coat. Spread the popcorn mixture in a single layer on the prepared baking sheets. Bake for 10-12 minutes or until the sugar coating is set. Be careful not to let the popcorn burn. The coating will firm up on cooling.
- Allow the popcorn to cool slightly, before breaking up the pieces with your hands into smaller pieces.
